Ingredients

For the Irish Whiskey Glazed Salmon:

For the Buttery Champ:

  • 2 lbs potatoes (Yukon Gold or Russet), peeled and cubed
  • ½ cup whole milk

  • ½ cup scallions (green onions), finely chopped

Instructions

Step 1: Prepare the Champ (Mashed Potatoes with Scallions)

  1. Place the cubed potatoes in a large pot and cover with cold, salted water.
  2. Bring to a boil, then reduce heat and simmer for about 15 minutes or until potatoes are fork-tender.
  3. In a small saucepan, heat the milk and butter together until warm but not boiling.
  4. Drain the potatoes and mash them until smooth.
  5. Stir in the warm milk-butter mixture, followed by the chopped scallions.
  6. Season with salt and black pepper to taste. Cover and keep warm while preparing the salmon.

Step 2: Make the Irish Whiskey Glaze

  1. In a small saucepan over medium heat, combine whiskey, honey, whole grain mustard, Dijon mustard, soy sauce, lemon juice, minced garlic, and smoked paprika.
