Recipe: Roast Christmas Chicken with Orange-Ginger Glaze

Ingredients

For the chicken:

  • 1 whole chicken (about 4-5 lbs)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 orange (quartered)
  • 1 small onion (quartered)
  • 2-3 sprigs fresh rosemary
  • 2-3 sprigs fresh thyme

For the Orange-Ginger Glaze:

  • 1/2 cup orange juice (freshly squeezed preferred)
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon grated fresh ginger
  • 2 teaspoons orange zest
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon butter

  • Olive oil
  • Salt
  • Black pepper
  • Garlic powder
  • Paprika
  • 1 orange
  • 1 small onion

Instructions

1. Prepare the Chicken

  1. Preheat your oven to 375°F (190°C).
  2. Remove any giblets from the chicken cavity and pat the chicken dry with paper towels.
  3. Rub the chicken all over with olive oil, then season with salt, black pepper, garlic powder, and paprika.
  4. Stuff the chicken cavity with the quartered orange, onion, rosemary, and thyme. Tie the legs together with kitchen twine.

2. Make the Orange-Ginger Glaze

  1. In a small saucepan, combine orange juice, honey, soy sauce, grated ginger, orange zest, and cinnamon.
  2. Bring the mixture to a simmer over medium heat, stirring occasionally, and let it reduce slightly (about 5 minutes).
  3. Stir in the butter until melted and remove from heat.

3. Roast the Chicken

  1. Place the chicken in a roasting pan or oven-safe dish breast-side up.
  2. Brush the chicken generously with the orange-ginger glaze.
  3. Roast the chicken in the preheated oven for 1.5 to 2 hours (or until the internal temperature reaches 165°F/74°C in the thickest part of the breast). Baste with the glaze every 20-30 minutes.

4. Rest and Serve
