Instructions
1. Prepare the Chicken
- Preheat your oven to 375°F (190°C).
- Remove any giblets from the chicken cavity and pat the chicken dry with paper towels.

- Stuff the chicken cavity with the quartered orange, onion, rosemary, and thyme. Tie the legs together with kitchen twine.
2. Make the Orange-Ginger Glaze
- In a small saucepan, combine orange juice, honey, soy sauce, grated ginger, orange zest, and cinnamon.
- Bring the mixture to a simmer over medium heat, stirring occasionally, and let it reduce slightly (about 5 minutes).

3. Roast the Chicken
- Place the chicken in a roasting pan or oven-safe dish breast-side up.
- Brush the chicken generously with the orange-ginger glaze.
- Roast the chicken in the preheated oven for 1.5 to 2 hours (or until the internal temperature reaches 165°F/74°C in the thickest part of the breast). Baste with the glaze every 20-30 minutes.
4. Rest and Serve
- Remove the chicken from the oven and tent it loosely with foil. Let it rest for 15 minutes to retain its juices.
