  • 4 cups cake flour

Making the Cake Base

  1. In a stand mixer bowl, combine the flour, milk, sugar, egg, yeast, and salt. Stir briefly to incorporate all ingredients.

  2. Add the cake flour and stir until completely incorporated. The mixture will be quite thick.
  3. Let the mixture sit for about 10 minutes to allow the flour to fully hydrate.

Bringing It All Together

  1. Once the dough has risen, check if it has pulled away from the sides of the baking dish. If so, gently push it back using lightly floured fingertips.
  2. Take handfuls of the crumb topping mixture and break it into approximately ½-inch pieces, scattering them generously over the entire surface of the dough. Don’t be shy – pile those crumbs high!
  3. Preheat your oven to 350°F and bake for approximately 35 minutes, or until a skewer inserted into the center comes out clean.
  4. Allow the crumb buns to cool completely in the pan, which should take about three hours. (I know it’s hard to wait, but it’s worth it!)
  5. Once cooled, use two spatulas to carefully loosen the sides of the cake from the pan, then slide the spatulas underneath to lift the entire cake out.
  6. Cut into 12 generous pieces, separate them slightly, and dust liberally with powdered sugar using a fine-mesh strainer.
